Beyond the Fortresses — rooted in Khorasan
It started in Mashhad in 1983 with a simple idea: make halva the way it should be made — real sesame ardeh, no shortcuts — and treat the people who sell it as partners, not just customers. Four decades later, even after growing into two factory complexes and more than sixty products, that hasn't changed.
How we make it
Halva is patient work. The sesame has to be roasted and milled into ardeh with care, the sugar cooked to exactly the right point, the paste pulled and folded until the texture turns silky. Get a step wrong and you can taste it. We've spent a long time learning to get it right — and we still taste every batch.
We still lean on traditional recipes, but we don't romanticise old equipment. Modern lines keep quality consistent across every carton, while experienced hands — some who've been with us for years — make the calls a machine can't. Good raw materials, an honest recipe, and people who know what “right” tastes like: that's the whole secret, and it isn't much of a secret.
The name
Simorgh is the great bird of Persian myth — old, wise, a little legendary. We took the name because it carries something we care about: endurance, and a sense of rising above the ordinary. The catalogue line “Beyond the Fortresses” comes from the same place — the plains of Devin, beyond the old strongholds of Khorasan, where our factories stand today.
More than sixty products
Tahini halva is where we began and it's still our heart, but the shelf has grown — premium halva trays for gatherings, traditional Khorasan sweets, everyday cakes, cream wafers and biscuits. One supplier, a full shelf, and a single standard of quality across all of it.
Our factories
Everything is made at two factory complexes on Quchan Road km 22, out on the Devin plain near Mashhad. This is where sesame becomes ardeh, and ardeh becomes halva.
